The Assyrtiko is the flagship wine of Domaine Sigalas. The grapes come from vines over 60 years old, rooted in volcanic soils rich in minerals. After careful hand-harvesting, the grapes are gently pressed, and the must ferments in stainless steel tanks at controlled temperatures. The wine then rests for a few months in steel before bottling.

In the glass, it displays a bright straw-yellow color. Its refined bouquet reveals notes of lime zest, grapefruit, Mediterranean herbs, white stone fruit, and a subtle flinty character. On the palate, it is crisp and vibrant, with intense flavors and a distinct saline backbone leading to a fresh, citrus-driven finish.
