Fakes is the Greek lentil soup: small lentils stewed with onion, carrot, garlic, tomato and bay leaf, and finished at the table with a splash of vinegar. Filling, cheap and entirely plant-based.

Ingredients
- 250 g small brown lentils
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, sliced
- 400 g chopped tomatoes or 1 tbsp tomato paste
- 60 ml olive oil, plus extra to serve
- 2 bay leaves
- 1.2 litres water
- Salt and pepper
- Red wine vinegar to serve
Method
- Rinse the lentils, bring them to the boil in water, boil for 5 minutes and drain.
- Soften the onion, garlic and carrot in the olive oil.
- Add the lentils, tomato, bay leaves and 1.2 litres of water and bring to the boil.
- Simmer for 35 to 40 minutes until the lentils are soft and the soup has thickened. Season with salt and pepper.
- Serve with a drizzle of olive oil and let everyone add their own vinegar.
Tips
- Boiling the lentils briefly first and draining them makes the soup lighter to digest.
- Traditionally served with feta, olives and bread.
