Greek Salad (Horiatiki): The Authentic Recipe

Horiatiki, the Greek village salad, is ripe tomatoes, cucumber, red onion, green pepper and olives, topped with a slab of feta, olive oil and oregano. There is no lettuce, and the feta goes on in one piece.

Ingredients

  • 4 ripe tomatoes
  • 1 cucumber
  • 1 red onion
  • 1 green pepper
  • A handful of Kalamata olives
  • 200 g feta
  • 1 tbsp capers (optional)
  • 4 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Salt

Method

  1. Cut the tomatoes into rough wedges, the cucumber into thick half-moons and the onion and pepper into thin rings.
  2. Put the vegetables in a bowl, sprinkle with a little salt and add the olives and capers.
  3. Place the feta on top in one piece.
  4. Drizzle generously with olive oil and sprinkle oregano over the feta.
  5. Serve straight away with bread to mop up the juices.

Tips

  • With properly ripe tomatoes you do not need vinegar. If they are less sweet, add a splash of red wine vinegar.
  • Salt just before serving, or the tomatoes release too much liquid.
