Tiropita is a Greek cheese pie of crisp filo filled with feta, eggs and a softer cheese. Greeks eat it for breakfast, as a snack on the go, or alongside a salad.

Ingredients
- 400 g feta
- 200 g ricotta or manouri
- 3 eggs
- 150 g Greek yogurt
- Black pepper
- 1 tsp dried oregano or a little fresh mint
- 400 g filo pastry
- 120 g melted butter or olive oil
Method
- Crumble the feta and mix with the ricotta, eggs, yogurt, pepper and herbs. Salt is usually not needed.
- Heat the oven to 180°C and grease a baking dish.
- Layer half the filo sheets in the dish, brushing each with butter.
- Spread the filling over and cover with the remaining buttered sheets.
- Score the top into portions, brush with butter and sprinkle with a few drops of water.
- Bake for 40 to 45 minutes until golden and cool for 10 minutes before cutting.
Tips
- Keep the filo covered with a damp cloth while you work.
- A few drops of water on top stop the upper layers from curling.
