Feta Saganaki: Pan-Fried Feta

Feta saganaki is a block of feta fried in flour until it has a crisp crust while the inside turns soft. The name comes from the sagani, the small two-handled pan it is served in.

Ingredients

  • 200 g firm feta, in one block
  • 2 tbsp flour
  • 1 egg, beaten (optional, for a thicker crust)
  • 3 tbsp olive oil
  • 1 lemon, in wedges
  • Pinch of dried oregano

Method

  1. Cut the feta into slices 1 to 1.5 cm thick and pat dry.
  2. Dip them in flour, optionally first in the egg and then in flour again.
  3. Heat the olive oil in a small frying pan until very hot.
  4. Fry the feta for 2 to 3 minutes per side until golden.
  5. Sprinkle with oregano and serve straight away with lemon.

Tips

  • Choose firm block feta; crumbly feta falls apart in the pan.
  • Variation: drizzle the warm feta with honey and sesame seeds.
