Greek Baklava Recipe with Walnuts and Honey

Greek baklava is layers of buttery filo with chopped walnuts, almonds and cinnamon, soaked in a honey and lemon syrup. In Greece it is made for name days, holidays and family visits.

Serves: about 24 pieces | Prep: 40 min | Cook: 50 min plus at least 6 hours soaking

Ingredients

  • 500 g filo pastry
  • 250 g unsalted butter, melted
  • 300 g walnuts, finely chopped
  • 50 g almonds, finely chopped
  • 50 g pistachios, finely chopped
  • 1 tsp ground cinnamon
  • Pinch of ground cloves
  • 200 g sugar
  • 200 ml water
  • 150 ml Greek honey
  • 1 tbsp lemon juice
  • 1 strip lemon peel

Method

  1. Boil sugar, water and lemon peel for 10 minutes, stir in the honey and lemon juice and leave the syrup to cool completely.
  2. Mix the nuts with the cinnamon and cloves.
  3. Heat the oven to 170°C. Lay 8 sheets of filo in a buttered tin, brushing each sheet with butter.
  4. Alternate a layer of nuts with 3 buttered sheets of filo until the nuts are used up. Finish with 8 buttered sheets.
  5. Cut into diamonds all the way to the bottom before baking.
  6. Bake for 45 to 50 minutes until golden. Pour the cold syrup over the hot baklava straight away and leave uncovered for at least 6 hours, ideally overnight.

Tips

  • Cold syrup on hot baklava keeps the layers crisp.
  • Keep the filo covered with a damp cloth so it does not dry out.
