Gigantes plaki are Greek giant beans baked in a sauce of tomato, onion, garlic and olive oil until the top caramelises lightly. With tinned beans it is an easy vegetarian main or meze.

Ingredients
- 2 tins Greek giant beans (gigantes), drained
- 4 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 carrot, finely grated
- 400 g chopped tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- Fresh parsley or dill
- Salt and pepper
Method
- Heat the oven to 190°C.
- Soften the onion, garlic and carrot in the olive oil.
- Add the tomatoes, tomato paste, oregano and half a glass of water and simmer for 10 minutes. Season.
- Mix the beans with the sauce in a baking dish.
- Bake for 30 to 35 minutes until the sauce has thickened and the top has lightly coloured. Sprinkle with parsley.
Tips
- Good with a slice of feta and bread, or as part of a meze table.
- Let it cool a little: lukewarm is when the flavour is best.
