Katsikaki paidaki, grilled goat ribs, is a summer classic in Greek tavernas. A simple marinade of olive oil, garlic, lemon and oregano is all it needs; the grill does the rest.
Serves: 4 | Prep: 15 min plus at least 2 hours marinating | Cook: 30 min
Ingredients
- 1 kg goat ribs (katsikaki paidaki)
- 3 garlic cloves, minced
- 50 ml extra virgin olive oil
- Juice of 1 lemon
- 2 tsp dried oregano
- Salt and freshly ground pepper
- Lemon wedges to serve
Method
- Mix the olive oil, garlic, lemon juice, oregano and pepper.
- Rub the ribs with the marinade and leave them covered in the fridge for at least 2 hours, ideally overnight.
- Take them out half an hour before grilling and season with salt.
- Grill over medium heat for 12 to 15 minutes per side, until cooked through with a brown crust.
- Rest for 5 minutes and serve with lemon wedges.
Tips
- Set up a hot and a cooler zone on the barbecue, so dripping fat that flares up does not burn the meat.
- Good with tzatziki, Greek salad and grilled pita.
