Greek Tiropita Recipe (Cheese Pie)

Tiropita is a Greek cheese pie of crisp filo filled with feta, eggs and a softer cheese. Greeks eat it for breakfast, as a snack on the go, or alongside a salad.

Serves: 8 | Prep: 20 min | Cook: 45 min

Ingredients

  • 400 g feta
  • 200 g ricotta or manouri
  • 3 eggs
  • 150 g Greek yogurt
  • Black pepper
  • 1 tsp dried oregano or a little fresh mint
  • 400 g filo pastry
  • 120 g melted butter or olive oil

Method

  1. Crumble the feta and mix with the ricotta, eggs, yogurt, pepper and herbs. Salt is usually not needed.
  2. Heat the oven to 180°C and grease a baking dish.
  3. Layer half the filo sheets in the dish, brushing each with butter.
  4. Spread the filling over and cover with the remaining buttered sheets.
  5. Score the top into portions, brush with butter and sprinkle with a few drops of water.
  6. Bake for 40 to 45 minutes until golden and cool for 10 minutes before cutting.

Tips

  • Keep the filo covered with a damp cloth while you work.
  • A few drops of water on top stop the upper layers from curling.
