About the company

Chrysi Zymi is produced by Michail Arabatzis S.A., a food company based in the Industrial Zone of Thessaloniki and a member of the Vivartia Group. The brand started making frozen pastry products in 1991 and added the Thessaloniki Bougatsa to its range in 1997, with cinnamon and caster sugar as part of the recipe from the start. The company describes its filo-making process as hand-worked: the dough is kneaded, left to rise, then stretched by hand into thin sheets before baking, a method that requires skill to keep the sheet intact.
