Greek Loukoumades Recipe (Honey Doughnuts)

Loukoumades are light, crisp yeast doughnuts, drenched in warm honey and finished with cinnamon and walnuts. In Greece they are fried to order and eaten straight away, while still hot.

Serves: 6 (about 30 pieces) | Prep: 15 min plus 1 hour rising | Cook: 20 min

Ingredients

  • 250 g plain flour
  • 7 g dried yeast
  • 1 tsp sugar
  • Pinch of salt
  • 300 ml lukewarm water
  • Sunflower oil for frying
  • 150 g honey
  • 2 tbsp water
  • 1 tsp ground cinnamon
  • 50 g walnuts, chopped

Method

  1. Mix the flour, yeast, sugar and salt, then beat in the lukewarm water to a smooth, sticky batter.
  2. Cover and leave in a warm place for about an hour, until doubled and full of bubbles.
  3. Heat the oil to 175°C.
  4. Drop small spoonfuls of batter into the oil with a wet spoon and fry in batches for 3 to 4 minutes until golden. Drain on kitchen paper.
  5. Warm the honey with 2 tbsp water, pour over the hot loukoumades and sprinkle with cinnamon and walnuts.

Tips

  • Dip the spoon in water between drops so the batter slides off easily.
  • Keep the oil at 170 to 180°C; too cool and the doughnuts soak up oil.
