Horiatiki, the Greek village salad, is ripe tomatoes, cucumber, red onion, green pepper and olives, topped with a slab of feta, olive oil and oregano. There is no lettuce, and the feta goes on in one piece.

Ingredients
- 4 ripe tomatoes
- 1 cucumber
- 1 red onion
- 1 green pepper
- A handful of Kalamata olives
- 200 g feta
- 1 tbsp capers (optional)
- 4 tbsp extra virgin olive oil
- 1 tsp dried oregano
- Salt
Method
- Cut the tomatoes into rough wedges, the cucumber into thick half-moons and the onion and pepper into thin rings.
- Put the vegetables in a bowl, sprinkle with a little salt and add the olives and capers.
- Place the feta on top in one piece.
- Drizzle generously with olive oil and sprinkle oregano over the feta.
- Serve straight away with bread to mop up the juices.
Tips
- With properly ripe tomatoes you do not need vinegar. If they are less sweet, add a splash of red wine vinegar.
- Salt just before serving, or the tomatoes release too much liquid.
