This beef magiritsa is a flavorful twist on the classic recipe, packed with fresh herbs and rich flavors. Perfect for those who prefer tender beef while still enjoying the comforting taste of Greek tradition.
Ingredients:

For a delicious Greek Easter beef magiritsa, you'll need:

1 kg beef (shoulder cut), diced into 2-3 cm cubes

1 large lettuce, cleaned and roughly chopped

1 bunch fresh spring onions (white and tender green parts), finely chopped

1 bunch fresh dill (stems removed), finely chopped

100 ml dry white wine

Juice of 2 lemons (adjust to preference)

2 egg yolks

2 tbsp corn flour
-
80 ml olive oil
Instructions:
To prepare beef magiritsa, follow these simple steps:

In a large pot, heat the oil over medium heat and sauté the onions until soft.

Add the beef and continue sautéing until it browns.

Pour in the wine and let the alcohol evaporate for about 2 minutes.

Season with salt and pepper, then add enough water to cover the meat by 2-3 cm.

Simmer for about 50 minutes or until the beef becomes tender.

In the last 15 minutes of cooking, add the lettuce. If needed, add more water.

In a bowl, whisk the egg yolks with cornstarch and lemon juice. Gradually add 200 ml of the broth from the pot while whisking.

Slowly pour the egg-lemon mixture into the soup, stirring constantly to combine.

Finally, stir in the dill, mix well, and remove from heat.
