Garides saganaki, shrimp saganaki, is shrimp in a tomato sauce with feta and a splash of ouzo, cooked in a small pan. A quick dish to serve with bread, or with rice or pasta as a main course.
Serves: 4 as a starter, 2 as a main course | Prep: 15 min | Cook: 25 min
Ingredients
- 400 g raw shrimp, peeled and deveined
- 3 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 400 g peeled tomatoes
- A splash of ouzo (optional)
- 150 g feta, crumbled
- 1 tsp dried oregano
- Fresh parsley
- Salt, pepper and a pinch of chilli flakes
Method
- Soften the onion and garlic in the olive oil.
- Add the tomatoes and simmer for 10 to 15 minutes until thick. Season with salt, pepper and chilli.
- Cook the shrimp in the sauce for 2 minutes, deglaze with the ouzo and let it bubble briefly.
- Crumble the feta over, sprinkle with oregano and put the pan under a hot grill, or cover it on low heat for 5 minutes, until the feta softens.
- Sprinkle with parsley and serve with bread.
Tips
- Add the shrimp only once the sauce is thick, or they turn tough.
- The ouzo adds a light aniseed note; leave it out if you do not like that.
