Feta saganaki is a block of feta fried in flour until it has a crisp crust while the inside turns soft. The name comes from the sagani, the small two-handled pan it is served in.
Serves: 4 as a meze | Prep: 5 min | Cook: 6 min
Ingredients
- 200 g firm feta, in one block
- 2 tbsp flour
- 1 egg, beaten (optional, for a thicker crust)
- 3 tbsp olive oil
- 1 lemon, in wedges
- Pinch of dried oregano
Method
- Cut the feta into slices 1 to 1.5 cm thick and pat dry.
- Dip them in flour, optionally first in the egg and then in flour again.
- Heat the olive oil in a small frying pan until very hot.
- Fry the feta for 2 to 3 minutes per side until golden.
- Sprinkle with oregano and serve straight away with lemon.
Tips
- Choose firm block feta; crumbly feta falls apart in the pan.
- Variation: drizzle the warm feta with honey and sesame seeds.
