For many of us, waiting for the mosaic cake to chill was the sweetest worry of childhood summers.
With its name reminding us of cool mosaic floors, this treat has become the ultimate summer classic.
And since no August feels complete without it, we’re sharing two delicious variations for you to enjoy!

* Traditional Version *
Instructions:

Whisk butter, icing sugar, and cocoa into a smooth paste.

Mix in a pinch of salt and orange zest.

Crush biscuits with cognac in a separate bowl.

Combine biscuits with the cocoa mixture.

Shape into a roll on parchment paper, wrap tightly in cling film, twisting ends like candy.

Chill 3–4 hours, slice, and enjoy!

* Kids Version * (No alcohol)

250g Couverture chocolate chopped

100g butter, cut into pieces
-
5 Strawberry Gemista Biscuits
-
60g icing sugar
-
15 Caprice, broken into pieces

Instructions:

Melt the couverture, butter, and icing sugar in a heatproof bowl over simmering water, stirring until smooth.

Remove from heat and let it cool to room temperature, about 15 minutes.

Break the biscuits and Caprice sticks into pieces and combine with the chocolate mixture.

Combine biscuits with the cocoa mixture.
-
Shape into a roll on parchment paper, wrap tightly in cling film, twisting ends like candy.

Chill 3–4 hours, slice, and enjoy!
