Label Story: The label draws inspiration from Karagiozis, the traditional Greek shadow theater figure who symbolizes everyday life during the Ottoman era. Through its apparent simplicity, this art form captured the realities and contrasts of society with honesty and depth. In the same spirit, Shadow Play White is a single-varietal wine—simple yet layered—offering an authentic expression of the indigenous Greek grape Assyrtiko.

Winemaking: Prior to fermentation, the grapes undergo cold maceration at 5–8°C for approximately two days, depending on the vintage. Fermentation then takes place in stainless steel tanks at a controlled temperature of 18–21°C, using only indigenous yeasts and without the addition of any oenological products. Malolactic fermentation occurs naturally.
After fermentation, the wine is racked off heavy lees and aged on fine lees with regular bâtonnage for three months. No protein stabilization is applied; only tartaric stabilization is used.
Aging Potential: The wine has an aging potential of up to five years. It is bottled with a natural cork to support optimal aging.
Ideal serving temperature: 12–16°C.

Tasting Notes: A bright golden hue introduces a rich and expressive aromatic profile that unfolds gradually in the glass. Initial notes of pear and quince give way to herbal nuances of sage, achillea, and bay leaf. The palate is well-balanced and harmonious, finishing with a long, lingering aftertaste.
Food Pairing: Pairs beautifully with fish and seafood, pasta, vegetable-based dishes, aged cheeses, and light poultry.
