Fakes: Greek Lentil Soup Recipe

Fakes is the Greek lentil soup: small lentils stewed with onion, carrot, garlic, tomato and bay leaf, and finished at the table with a splash of vinegar. Filling, cheap and entirely plant-based.

Serves: 4 | Prep: 10 min | Cook: 45 min

Ingredients

  • 250 g small brown lentils
  • 1 large onion, chopped
  • 2 garlic cloves, crushed
  • 2 carrots, sliced
  • 400 g chopped tomatoes or 1 tbsp tomato paste
  • 60 ml olive oil, plus extra to serve
  • 2 bay leaves
  • 1.2 litres water
  • Salt and pepper
  • Red wine vinegar to serve

Method

  1. Rinse the lentils, bring them to the boil in water, boil for 5 minutes and drain.
  2. Soften the onion, garlic and carrot in the olive oil.
  3. Add the lentils, tomato, bay leaves and 1.2 litres of water and bring to the boil.
  4. Simmer for 35 to 40 minutes until the lentils are soft and the soup has thickened. Season with salt and pepper.
  5. Serve with a drizzle of olive oil and let everyone add their own vinegar.

Tips

  • Boiling the lentils briefly first and draining them makes the soup lighter to digest.
  • Traditionally served with feta, olives and bread.
