Grilled Greek Goat Ribs on the BBQ (Katsikaki Paidaki)

Katsikaki paidaki, grilled goat ribs, is a summer classic in Greek tavernas. A simple marinade of olive oil, garlic, lemon and oregano is all it needs; the grill does the rest.

Serves: 4 | Prep: 15 min plus at least 2 hours marinating | Cook: 30 min

Ingredients

  • 1 kg goat ribs (katsikaki paidaki)
  • 3 garlic cloves, minced
  • 50 ml extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • Salt and freshly ground pepper
  • Lemon wedges to serve

Method

  1. Mix the olive oil, garlic, lemon juice, oregano and pepper.
  2. Rub the ribs with the marinade and leave them covered in the fridge for at least 2 hours, ideally overnight.
  3. Take them out half an hour before grilling and season with salt.
  4. Grill over medium heat for 12 to 15 minutes per side, until cooked through with a brown crust.
  5. Rest for 5 minutes and serve with lemon wedges.

Tips

  • Set up a hot and a cooler zone on the barbecue, so dripping fat that flares up does not burn the meat.
  • Good with tzatziki, Greek salad and grilled pita.
