Tyropitakia are small filo triangles filled with feta and kefalograviera. You find them on every Greek party table and in every bakery; they also freeze well and can go into the oven straight from the freezer.

Ingredients
- 250 g feta, crumbled
- 150 g kefalograviera, grated
- 2 eggs
- Freshly ground pepper
- 1 tbsp fresh mint or dill, chopped
- 8 sheets filo pastry
- 100 g melted butter
Method
- Mix the feta, kefalograviera, eggs, pepper and herbs.
- Heat the oven to 190°C and line a baking tray with baking paper.
- Cut the filo into long strips about 7 cm wide and brush them with butter.
- Put a teaspoon of filling at the bottom of a strip and fold the strip over and over like a flag into a triangle.
- Place the triangles on the tray, brush with butter and bake for 20 to 25 minutes until golden.
Tips
- Keep the rest of the filo covered with a damp cloth.
- To freeze: freeze them unbaked and bake from frozen, adding 5 minutes.
