Gigantes Plaki: Greek Giant Beans Baked in Tomato Sauce

Gigantes plaki are Greek giant beans baked in a sauce of tomato, onion, garlic and olive oil until the top caramelises lightly. With tinned beans it is an easy vegetarian main or meze.

Ingredients

  • 2 tins Greek giant beans (gigantes), drained
  • 4 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 carrot, finely grated
  • 400 g chopped tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • Fresh parsley or dill
  • Salt and pepper

Method

  1. Heat the oven to 190°C.
  2. Soften the onion, garlic and carrot in the olive oil.
  3. Add the tomatoes, tomato paste, oregano and half a glass of water and simmer for 10 minutes. Season.
  4. Mix the beans with the sauce in a baking dish.
  5. Bake for 30 to 35 minutes until the sauce has thickened and the top has lightly coloured. Sprinkle with parsley.

Tips

  • Good with a slice of feta and bread, or as part of a meze table.
  • Let it cool a little: lukewarm is when the flavour is best.
