Souvlaki simply means little skewer. Cubes of pork or chicken are marinated in olive oil, lemon, garlic and oregano, then grilled hot and fast. Serve them on the stick with salad, or wrapped in pita with tzatziki.

Ingredients
- 600 g pork neck or chicken thigh, in 3 cm cubes
- 3 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tbsp dried oregano
- Salt and black pepper
- Wooden skewers, soaked for 30 minutes
- Pita bread, tomato, red onion and tzatziki to serve
Method
- Whisk together the olive oil, lemon juice, garlic, oregano and pepper.
- Toss the meat in the marinade and refrigerate for at least 1 hour, ideally overnight.
- Thread the meat onto the skewers and season with salt.
- Grill over high heat for 10 to 12 minutes, turning often, until cooked through and lightly charred.
- Serve with warm pita, tomato, red onion and tzatziki.
Tips
- Pork neck and chicken thigh stay juicier than lean cuts.
- Do not pack the pieces tightly on the skewer, so they cook evenly.
