The grapes are medium-sized, round, and tightly clustered, with thick skins.
This variety yields wines with expressive aromatics as well as more gastronomic styles, characterized by a full body, pronounced structure, and a long, persistent finish.

A distinctive interpretation of Asproudi, rooted in traditional winemaking practices. Extended skin contact, fermentation with indigenous yeasts, minimal sulphite levels, and no additional human intervention allow the wine to express its pure character. The wine matured on its fine lees for four months, gaining depth and texture.

Characteristics:
Aromas of citrus and bergamot, layered with notes of orange blossom and ripe citrus fruit. The palate is rich and expressive, confirming the aromatic profile with impressive density. A subtle presence of tannins leads to a long, lingering finish.

Food Pairing:
Pairs beautifully with traditional Greek cuisine, meat dishes, sweet-and-sour flavors, and spicy food.

Unfiltered:
This wine is unfiltered and may appear naturally cloudy, with a light sediment possible at the bottom of the bottle.

The Winery: In the valley of the ancient Thiamis River—known today as the Kalamas—in Thesprotia, the Zervas family cultivates its vineyards with deep respect for tradition and an unwavering commitment to quality. Great care is taken at every stage, from cultivation and harvest to vinification, bottling, and presentation, ensuring wines that are truly worth discovering.

Our modern winery is located in Parapotamos, Thesprotia, covering an area of 800 square meters, and is currently in the process of being certified as a bioclimatic winery.

Equipped with modern winemaking technology, the facility is designed to fully utilize gravity flow, minimizing the use of pumps and preserving the natural integrity of the grapes. Our wines are produced exclusively from the finest grape juice, with many stages of the winemaking process carried out by hand to ensure maximum quality.

Since 2022, the winery has been open to visitors, offering guided tours, wine tastings, and the organization of special events.
