About the company: Volikakis Company was established in 1998 by the Volikakis family, commencing its operations in Chania within the Agios Ioannis region. In a frying pan: In a large frying pan heat about an inch of vegetable oil over medium heat.  When the oil is hot enough (sizzles when a kalitsouni is dropped in), add as many kalitsounia as the pan will accommodate, being careful not to overcrowd them.  Cook, until golden brown, about 2 – 3 minutes per side.

In the oven: Preheat the oven to 170^o C. Place onto a greased baking sheet(or use parchment paper). Bruch the top of the product with egg yolk and scatter over sesame seeds. Bake for 15 minutes until golden brown.
