Shrimp Saganaki: Shrimp with Tomato and Feta

Garides saganaki, shrimp saganaki, is shrimp in a tomato sauce with feta and a splash of ouzo, cooked in a small pan. A quick dish to serve with bread, or with rice or pasta as a main course.

Serves: 4 as a starter, 2 as a main course | Prep: 15 min | Cook: 25 min

Ingredients

  • 400 g raw shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 400 g peeled tomatoes
  • A splash of ouzo (optional)
  • 150 g feta, crumbled
  • 1 tsp dried oregano
  • Fresh parsley
  • Salt, pepper and a pinch of chilli flakes

Method

  1. Soften the onion and garlic in the olive oil.
  2. Add the tomatoes and simmer for 10 to 15 minutes until thick. Season with salt, pepper and chilli.
  3. Cook the shrimp in the sauce for 2 minutes, deglaze with the ouzo and let it bubble briefly.
  4. Crumble the feta over, sprinkle with oregano and put the pan under a hot grill, or cover it on low heat for 5 minutes, until the feta softens.
  5. Sprinkle with parsley and serve with bread.

Tips

  • Add the shrimp only once the sauce is thick, or they turn tough.
  • The ouzo adds a light aniseed note; leave it out if you do not like that.
