Tyropitakia: Greek Cheese Triangles in Filo

Tyropitakia are small filo triangles filled with feta and kefalograviera. You find them on every Greek party table and in every bakery; they also freeze well and can go into the oven straight from the freezer.

Serves: 6 (about 24 pieces) | Prep: 30 min | Cook: 25 min

Ingredients

  • 250 g feta, crumbled
  • 150 g kefalograviera, grated
  • 2 eggs
  • Freshly ground pepper
  • 1 tbsp fresh mint or dill, chopped
  • 8 sheets filo pastry
  • 100 g melted butter

Method

  1. Mix the feta, kefalograviera, eggs, pepper and herbs.
  2. Heat the oven to 190°C and line a baking tray with baking paper.
  3. Cut the filo into long strips about 7 cm wide and brush them with butter.
  4. Put a teaspoon of filling at the bottom of a strip and fold the strip over and over like a flag into a triangle.
  5. Place the triangles on the tray, brush with butter and bake for 20 to 25 minutes until golden.

Tips

  • Keep the rest of the filo covered with a damp cloth.
  • To freeze: freeze them unbaked and bake from frozen, adding 5 minutes.
