About the product

Bougatsa is a layered filo pie filled with a semolina-based custard cream, a standard item in Greek bakeries and breakfast counters. This version comes frozen and unbaked, built from sheets of filo wrapped around a cream filling made with cow's milk, semolina and Madagascar vanilla. Once baked, the filo turns crisp and flaky while the filling sets into a soft, sliceable custard, traditionally finished with powdered sugar and cinnamon. It works as a bakery case item, a café breakfast or dessert offering, or a sweet course on a restaurant menu.

About the company

Rodoula was founded in 1999 in Athens by brothers Panagiotis and Ilias Karachalios, who began with a small workshop producing dough based on their family's recipes. The company has since grown into one of Greece's larger frozen dough and pastry producers, running two production facilities along with branches in Thessaloniki and Crete. It supplies foodservice, HORECA, bakery and supermarket clients, and exports beyond Greece to other parts of Europe, the Americas, Panama, Canada, the Middle East and Australia. Its product range centers on frozen Greek dough and pastry items, including the bougatsa line, produced for bakeries and kitchens that need consistent, ready-to-bake stock.

Instructions

Keep frozen at -18°C until ready to use. Rodoula bougatsa is baked directly from frozen, with no need to thaw beforehand. In a conventional fan or convection oven, bake at 180°C for 30 to 40 minutes. In a combi or Rational oven, bake at 165°C (329°F) for approximately 26 minutes. Once golden, finish with a dusting of powdered sugar and cinnamon in the traditional style before serving.
